Good Morning!

I’ve got big and exciting plans today:  Sermon tweaking and Food Network watching.

Fueled by a great breakfast: Whole Wheat Toast + Peanut Butter + Granola + Honey.

Bruce and I were looking back on some of my old videos last night and came across the absolute hilarity of our wedding cake disaster.  I know some of you have seen it, but I thought I would post it again for anyone who is new to my blog.  Enjoy!

Woo-hooooooo the power’s back!

It feels so great to be blogging on my computer at home!  I’m still trying to get my house put back together, but at this point I don’t care.

By the way – dishes are wicked gross if they haven’t been washed in five days.

Emphasis on the word gross.

So in the meantime I thought I’d download and upload some of my iPhone pics from the past couple of days.

I did not take pictures of the dishes.

This is a video I took on Sunday morning – the winds got worse throughout the day, but still … nowhere near the 150 mph that some areas have the country have seen with Category 4s and 5s.

Dad’s Mac ‘n Cheese Casserole + Accent Vlog

Evening everyone!

Before I get into dinner, my third article went live on Suite101 today! I decided I wanted to research Seasonal Affective Disorder, something that I haven’t had to deal with over the past several years. After moving back to Connecticut, I realized very quickly how difficult long winter months can be – I hope this article can offer some help and guidance! Check it out here.

Now … dinner!  Things have been a little bit crazy over here tonight, so I pulled out one of my dad’s classic recipes to make a quick and easy dinner.

Mmm.  It’s simple.  Here’s how you make it.

Dad’s Mac ‘n Cheese Casserole
1 box Macaroni & Cheese, prepared according to instructions
1 pound Ground Beef
Sea Salt & Pepper
Chili Powder & Tabasco
Diced Onion & Garlic
Prepare the macaroni and cheese according the instructions on the box.  Add a little bit more milk than instructed (1/3 cup instead of 1/4 cup in this case).
Brown your beef, adding generous amounts of all of these spices.  Flavor is key with this dish, so don’t be afraid to pour it on!

When the macaroni is ready … 

… add the meat.  Stir and serve!

Maybe not the healthiest of dinners, but you could add some veggies or serve on a salad for some nutritional benefits. 🙂

Sleet Day

Morning!  Happy Wear a Dress Tuesday!

I have a yummy breakfast to share with you today, but first – a lesson in Christmas Tree maintenance.

Because if you don’t, your carpet will look like this when you take it down.

Moving right along …

We are having a sleet day here and it definitely called for a hearty breakfast.  I was craving the classic “2 eggs, toast, home fries”, but didn’t have any potatoes!  I found a delicious substitute …

Yes, that is rice!  I was staring at it in my fridge and realized that I was craving the starch-ness of the potatoes.  Rice = starch.

It was really good!  And rice is much easier for me to keep than potatoes, so I will definitely be trying this again.  And the texture of the rice worked well with the texture of the scrambled eggs.

I love this mug – Tigger is my favorite Disney character. 🙂

Another fun part of this mug?  It holds like three cups worth of coffee.

Alright, I’m off to enjoy this winter wonderland we’ve got going on over here …

Careful Of The Icy Patch!

The sun is shining and it is a beautiful day!  C’mon sun – melt the block of ice at the bottom of my driveway!

Wait – can ice melt if the sun is shining, but it’s only 20 degrees?

Leftover pancakes for breakfast!

With a glub or two of real maple syrup.

And two cups of coffee – black of course!

Mmm.

And now for some entertainment!  Bruce took this video of me yesterday while I was trying to clear the snow off of our top deck.  My favorite part is when I realized he was filming, waved to the camera and then promptly slipped and almost fell on my face.  Smooth.
